Behind The Scenes of Bird & Blend Tea Co. 10th Birthday Cake

Find out how I made Bird & Blend’s 10th birthday cake for their Big Tea Hangout on Saturday 2nd of July 2022!

I started off with a proposal for the cake. When Bird & Blend agreed the design, I made a scale drawing of how I envisioned the cake would look (see picture below).

For several weeks, prior to baking the cake, I prepared the four different coloured chocolate sticks, lettering and logos (the logos were made by Charlene’s Chocolate Factory) so they were ready for decoration. When the week came around for making the cake, I made four 9 x 12 inch vanilla sponge cakes which I later cut in half horizontally, trimming the tops to make equal sections. Next I made the vanilla buttercream, which I added to the layers and alternated with layers of strawberry jam, so I ended up with two separate four layer cakes. I put these cakes side by side on a cake board and then used some buttercream to join them together to make one large 18 x 12 inch cake.

I created a buttercream crumb coat over the cake to lock in the crumbs. The whole cake went in the fridge to firm up before I smoothed the top layer of buttercream over the top and sides. Using the chocolate sticks in a sequence of blue, yellow, turquoise and white, I placed them around the perimeter of the cake one at a time. It took 35 minutes to put more than 200 sticks around the cake. Then using the chocolate lettering I positioned the wording, which fitted perfectly thanks to the scale drawing. I finished it all off by placing the two chocolate Bird & Blend logos on the left and right of the cake.
